Hi, I’m Amelia. Just being real, I’ve never been someone who loves spending hours in the kitchen.

Some people call it lazy cooking. I call it keeping things simple. I like food. I like feeding people. But I don’t think it has to be complicated or stressful to be good.

Growing up, we didn’t do fancy meals. Just quick, warm, filling stuff that made us feel okay. That kind of stuck with me. Later, when I moved out, I had no clue what I was doing in the kitchen. I wasn’t dreaming of being a chef or anything like that. I just didn’t want to eat junk all the time.

So I started figuring things out. Not gourmet stuff, just simple, allergy-friendly meals I could throw together without messing up the whole kitchen. One pan, one bowl, done. Gluten-free, dairy-free, and full of real ingredients. Tastes good, no stress.

Back in college, I cooked for friends when we were tired of ordering out. It was basic, but we had fun. And honestly, that’s when something clicked. I realized I kind of liked it, not just the cooking part, but the sitting around and eating together. That stuck too.

Then I met David. We got married, and everything changed in the best way. He’s always been supportive, especially when it comes to my cooking experiments. He never complains, even when I burn something or try a weird new recipe. Honestly, he’s my first taste-tester and biggest cheerleader in the kitchen.

And then there’s his family. Big, warm, and always ready to eat. His dad, John, hypes me up every time I cook. His mom, Susan, still texts me asking for that thing with the sauce I made once. His siblings, Michael and Emily, are great too. They try my recipes and send photos of their versions, which makes me smile every time. It’s wild, but sweet.

Now I’ve got Lily and Sophie, my two little chaos machines in the kitchen. They mix, taste, spill, repeat. It’s loud, messy, kind of a disaster, and I love it.

That’s why I started What Is a Lazy Cook. To show that cooking doesn’t need to be perfect. You don’t need the latest gadgets or five kinds of vinegar. Just a few simple tricks and maybe a little curiosity.
